Roasted Cherry Tomatoes

Perfect vegetable side for meat, fish or chicken. Minimum ingredients, minimum time, maximum flavour - Roasted Cherry Tomatoes.

Roasted Cherry Tomatoes

recipe adapted from Barefoot Contessa Parties

 

  • Cherry tomatoes
  • Olive oil
  • Salt (good salt, not regular table salt)
  • Freshly ground black pepper
  • Basil (not used in the picture)

 

- In a bowl mix the tomatoes, oil, salt and pepper.
- Pour the tomatoes into a roasting pan.
- Roast them at 400F (200C) oven for 15-20 minutes until they are soft and almost bursting.
- Sprinkle with basil before serving.

I love roasted tomatoes and the Barefoot Contessa is one of my fave shows. I've improvised a side dish of roasted tomato halves with a dash of salt, pinch of dried oregano and basil on hand, drizzle of olive oil and topped with parmesan.

A few months ago, I was inspired by Ina's chicken salad sandwiches and improvised her recipe by memory - best chicken salad I've ever had!

Susan, I love Ina's recipes, I never had a problem with any of them. I should try that chicken salad.
