I took a little break from blogging. I wish it was a break to relax and recharge, but life happened and I just physically had no time and, on occasion, no energy to sit down in front of my computer and write a post. Life is funny. Sometimes there are days, weeks even, when everything is the same and slow and comforting and hours drag like thick molasses. And then suddenly there are swirls of activities, events, deadlines that hit you over the head and rush over thick and steaming like boiling and foaming milk. You blink and a month has gone.

And when life is happening and you have no choice but let it be, these Instant Pot Meatballs and Mashed Potatoes are an easy and delicious comforting meal, ideal for a weeknight dinner. Meatballs are healthy and not fried. The whole dish comes together easy in a pressure cooker and you don’t have to watch multiple pots and pans to cook a complete meal.

When making these Braised Duck Breasts with Apples and Onions, your kitchen will smell like a high-end restaurant. Succulent duck breasts meld together with delicious sweet and tart apple-onion sauce with cranberries. It’s a comforting and delicious meal perfect for any celebration or just a cozy weekend dinner.

This recipe for the Braised Duck Breasts with Apples and Onions is an homage to that Russian Duck with Apples. In Russia, the most popular duck recipe is for the whole duck that is stuffed with whole or chopped apples and then roasted in the oven. In my version, I use duck breasts that I sear first, then braise in a delicious mixture of Ontario apples, onions, thyme, and cranberries. For those who think that braising duck breasts is a sacrilege, I tried this same recipe with duck legs also. It works and is totally delicious but I personally like Braised Duck Breasts with Apples and Onions more than the legs. To make this recipe even more Russian, I serve it with buckwheat, which is a traditional side in Russian cuisine.

Healthy chicken stew (Instant Pot or Stove Top)

Healthy Chicken Stew is delicious and easy to make. It has only 5 ingredients and is loaded with vegetables. Made on the stove top or in Instant Pot, it’s a perfect meal to serve over rice, quinoa, or noodles.

If I have a bit extra time then I prefer my Healthy Chicken Stew to be made on the stove top. The chicken and vegetables cook in a little bit of water and their own juices for a long time until everything is melting and juicy. Instant Pot version of this recipe is faster and a bit easier since you don’t have to watch the pan and make sure that there’s enough water. However, because the water doesn’t evaporate in the pressure cooker and the vegetables and the chicken also have a lot of liquid, the resulting stew comes out a bit soupy. To counteract the soupiness (it’s a word, right?), I shred the chicken. The flavour of this Healthy Chicken Stew is the same whether it’s made on the stove top or Instant Pot but the texture is a little bit different.
