I recently had the privilege of attending the grand opening of Burnbrae Farms’ new solar-powered facility in Oxford County. It is their first off-the-grid facility, called Ralos (which is solar spelled backwards), that not only is completely powered by solar energy but it also often provides extra energy to their neighbouring farm.
The farm is the largest solar-powered egg farm in Canada. It is powered by the sun with solar panels on the roof of three of the four barns in the farm. The four barns are: one starter pullet barn, one free-run layer and two free-range layer barns.
Of course, for the protection and safety of the hens, the farm has a backup generator to ensure power is always available on the farm. It is also equipped with battery storage that stores energy for use overnight or during extended cloudy periods where there is limited sun (I mean, it is located in Ontario, after all).
This solar facility is part of Burnbrae Farms’ commitment to help with sustainable farming and to reduce greenhouse emissions by five percent by 2020. The new facility also has a visitors centre to promote transparency in farming and help educate people who aren’t familiar with what farming often entails.
To mark and commemorate that occasion, provincial Minister of Agriculture, Food and Rural Affairs, Ernie Hardeman attended the opening ceremony. And when the Minister of Agriculture attends an event like that, you know that it is something really important.

I created the recipe for Baked Scotch Eggs with Vegetables to celebrate this big milestone in Burnbrae Farms’ 75+ years history.
I’ve been introduced to Scotch Eggs by my best friend about 12 years ago when she was living in England and I visited her. I fell in love!
A few years later I visited my friend again and all I could think of on the plane were those Scotch Eggs. I disembarked from the plain, checked the time for the bus, and went to the local Marks & Spencer to buy the Scotch Eggs. The bus left ahead of schedule. I was stranded in the airport without means to travel another 2 hours to see my friend. But I had Scotch Eggs and they made everything better!
Since then I order Scotch Eggs anytime I see them on a menu at pubs. That is until I finally decided to make my own healthier version. And you know what? They still taste just as delicious!

What are Scotch Eggs
There are lots of different stories about the origins of Scotch Eggs and their history. But basically Scotch Eggs are boiled eggs, wrapped in ground meat and baked or deep-fried.
There are many different variations for Scotch Eggs, from various kinds of ground meat, most recipes use sausage meat, whereas I use ground chicken, to the way the egg is boiled. Some recipes insist on soft boiled egg with the delicious and luscious egg yolk and some say that hard boiled eggs are also fine.
After perusing many recipes online, I realized that Scotch Eggs are just as controversial as chili, or borscht, or apple pie. Everyone thinks that their recipe is only proper one.
I believe that with our lifestyles, dietary restrictions, socioeconomic levels, every recipe deserves to exist. If it is delicious, then it shouldn’t matter what it is called.
Ingredients to make Sheet Pan Scotch Eggs
I wanted to make Scotch Eggs healthier so I am using ground chicken as opposed to sausage meat which is most often made with pork. I also like the texture of ground chicken as it becomes more compact and uniform as opposed to crumbly and light.
For Scotch Eggs
- Medium-boiled eggs (use technique for Perfect Hard Boiled Eggs that I described in my post for Instant Pot Soft Boiled Eggs)
- Ground chicken
- Spices (I used: salt, pepper, onion powder, paprika, dried parsley)
- Seasoned breadcrumbs
- Canola oil
- Optional: Cooking spray
For the vegetables
Use whatever vegetables would cook to your liking in 30-35 minutes. I used:
- Broccoli
- Sweet bell pepper
- Red onion
- Also some olive oil, salt and pepper
You can use:
- Asparagus
- Brussels sprouts
- Sliced carrots
- Green beans
How to make Baked Scotch Eggs with Vegetables
- Prep the vegetables and spread on half (or about two thirds) of a large sheet pan, drizzle with olive oil and season with salt and pepper to taste.
- Brush the remaining space on the sheet pan with Canola oil.
- Mix the ground chicken with all the spices.
- Wrap each cooked (I like medium-boiled but you can use soft-boiled) peeled eggs in the prepared ground chicken mixture.
- Coat each prepared egg in seasoned breadcrumbs really well.
- Arrange breaded eggs on the oiled sheet pan.
- Optionally, spray the eggs with cooking oil.
- Bake in the fully preheated oven for 30-35 minutes or until the internal temperature of the chicken layer reached a minimum of 165F.
Note, if the vegetables that you have on hand cook faster than 30 minutes or longer than 30 minutes, then you can simply add them midway through cooking Scotch Eggs or before you start cooking Scotch Eggs. You can totally use your favourite ingredients there, just adjust the timing a bit.
Tips for making Baked Scotch Eggs
Since the eggs are cooked in the oven at high temperature for 30 minutes, their egg yolk will be cooking. So, if you are using very soft boiled eggs, then after baking they will turn into medium boiled with still slightly liquid egg yolk.
If you use medium-boiled, slightly jammy eggs, then they will turn into deliciously smooth hard-boiled eggs after baking. Finally, if you use fully hard boiled eggs, then they will get even more cooked after baking and may have a slightly rubbery texture. I recommend using my technique for making jammy eggs.

Baked Scotch Eggs with Vegetables
Ingredients
Baked Scotch Eggs
- 4 medium-boiled eggs
- 1 pound lean ground chicken
- 1/2 teaspoon salt (or more to taste)
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 teaspoons dried parsley
- 1/4 cup seasoned breadcrumbs
- 1/2 tablespoon Canola oil (or more if needed)
- cooking oil spray (optional)
Sheet Pan Vegetables
- 4 cups broccoli florets (about 1/2 pound)
- 1 sweet bell pepper, chopped into 1-inch pieces
- 1/4 red onion, sliced
- 1 tablespoon olive oil (or more if needed)
- salt and pepper for the vegetables to taste
Instructions
- Preheat the oven to 400F.
Prepare the Sheet Pan Vegetables
- Prep the vegetables and spread on half (or about two thirds) of a large sheet pan, drizzle with olive oil and season with salt and pepper to taste.
Prepare Scotch Eggs
- Mix the ground chicken with all the spices.
- Wrap each cooked (I like medium-boiled but you can use soft-boiled) peeled eggs in the prepared ground chicken mixture.
