I made this for Rosh Hashanah, substituting plums that I added  with the apples for the cranberries because that was what I had. I also substituted the stock for some apple cider and a little better than bouillon for salty and umami. Also, instead of cooking the sauce down on the stove and then broiling, I just uncovered the pan and baked it in a hot 450 degree  oven for about 20 minutes and that crisped up the duck skin and cooked the sauce down at the same time with less risk of burning.]]></description>
