Lentil-Turkey Meatballs are delicious, healthy, and filling. They are perfect to eat on their own or to add to pasta, sandwiches, or soups. Healthy chicken stew (Instant Pot or Stove Top)

Healthy Chicken Stew is delicious and easy to make. It has only 5 ingredients and is loaded with vegetables. Made on the stove top or in Instant Pot, it’s a perfect meal to serve over rice, quinoa, or noodles.

If I have a bit extra time then I prefer my Healthy Chicken Stew to be made on the stove top. The chicken and vegetables cook in a little bit of water and their own juices for a long time until everything is melting and juicy. Instant Pot version of this recipe is faster and a bit easier since you don’t have to watch the pan and make sure that there’s enough water. However, because the water doesn’t evaporate in the pressure cooker and the vegetables and the chicken also have a lot of liquid, the resulting stew comes out a bit soupy. To counteract the soupiness (it’s a word, right?), I shred the chicken. The flavour of this Healthy Chicken Stew is the same whether it’s made on the stove top or Instant Pot but the texture is a little bit different.

This Instant Pot Borscht is healthy and delicious. It’s a perfect and affordable way to stay warm during winter while eating cozy and comforting vegan and gluten-free soup. Making it in a pressure cooker means that you don’t have to stir the pot. It’s easy to make and easier to eat.

These Cookie Butter Stuffed Cupcakes are soft, fluffy, spicy, and delicious. Filled with delicious cookie butter, they are a perfect treat during Christmas Holidays. They aren’t as sweet as many people would prefer so you could add extra sugar to the batter if you’d like. I also notoriously don’t like any kind of icing or frosting, so I only lightly sprinkled some icing sugar over the cupcakes but even that wasn’t really necessary in my mind. If you are really into frosting then I’d suggest adding some of the speculaas spices and maybe even more cookie butter to your favourite buttercream.
