I am going to say something that will most likely shock people – I don’t really love cupcakes! Well, this is not entirely true. I love the cake part of the cupcakes but not the cup frosting part of the cupcakes.
In fact, I don’t like icing/frosting in regular cakes either. Unless it’s cream cheese frosting but then it has to be cream cheese based and without butter. It’s the buttercream that doesn’t appeal to me at all. Am I crazy? Am I the only one?
Besides blogging about food I also do food photography. Recently I ended up with 72 (yes, you read it right) cupcakes!
I gave some away. I froze some. I sent a package to work with my hubby. I still had a dozen left. It is actually pretty difficult to distribute 72 cupcakes!
I remembered that one of my favourite part of the Chocolate Kefir Cake is actually the little truffles on top. Whenever I make cakes that need to be levelled, I always save the crumbs. Sometimes I use them right away and sometimes I freeze them just to make cake truffles later.
So, why not make Truffles out of that dozen Cupcakes? Read below how to turn cupcakes into truffles, four kinds of truffles!
Why turn cupcakes into truffles?
For one, you won’t be using all the frosting. It’s always a plus in my book. And although it won’t make the resulting truffles healthy but at least they’ll be healthier than the cupcakes.
Also, learning how to turn cupcakes into truffles means that you can enjoy cupcakes that are a little bit more stale or a few days old or just dryer than you’d like. Which is great for reducing food waste!
Truffles are fun to eat and they are cute enough to serve to adults at a dinner party. Also, they are perfect snacking size for a cup of coffee.
Truffles of Cake pops? That is the question
I like calling these little balls of deliciousness truffles but technically they are the same as cake pops. You can turn then into proper cake pops by adding a stick and freezing them to firm up.
How to turn cupcakes into truffles
It is essentially just a few steps with a few variations in flavourings.
- Remove all the icing from the cupcakes and reserve it (you will not use all of it but you will use some)
- Crumble all the cake part (you can use a food processor to do so but a good old fork works fine also)
- Mix in the cake crumbs with your flavourings and a bit of icing
- Chill in the fridge
- Shape into truffles
- Optionally roll in cocoa powder, icing sugar or nuts

How to turn cupcakes into truffles
Ingredients
- 12 chocolate cupcakes
Rum Raisin Cupcake Truffles
- 1/8 cup raisins
- 1/4 cup boiling water
- 2 tablespoons rum
- 1 teaspoon cupcake frosting
- icing sugar for rolling
Banana and Pecan Cupcake Truffles
- 1/2 banana
- 1 tablespoon cocoa powder
- 1 teaspoon cupcake frosting
- 10 pecan halves
Peanut Butter Cupcake Truffles
- 3 tablespoons smooth peanut butter
- 1 tablespoon peanut butter powder (use cocoa powder if can't find PB powder)
- 1 teaspoon cupcake frosting
- chopped peanuts for rolling
Bailey's Cream Cupcake Truffles
- 2 tablespoons Bailey's Cream Liquor
- 1 teaspoon cupcake frosting
- cocoa powder for rolling
Instructions
- Scrape frosting from cupcakes.
- Save a little bit of frosting and discard the rest.
- Using a fork break the cake part of the cupcakes into fine crumbs. Split evenly between 4 bowls.
- You'll need 3 cupcakes for each kind of truffles.
Rum Raisin Cupcake Truffles
- Soak raisins in 1/4 cup boiling water for a few minutes until raisins are soft and plump.
- Drain the water and add rum to raisins.
- Add rum-raisin mixture to cupcake crumbs.
- Add a spoon of frosting.
- Mix really well and chill in the fridge for 5-10 minutes while you are making other cupcake truffles.
- Once the mixture is chilled, roll into walnut size balls. About 9-10 truffles. Roll each in icing sugar.
Banana and Pecan Cupcake Truffles
- Mash half a banana with a fork really well.
- Add cupcake crumbs, cocoa powder, frosting and mix well.
- Freeze for about 10 minutes while you are making other cupcake truffles.
- Once the mixture firms up a bit, roll into walnut size balls and stuff each with a pecan half. Will make about 9-10 truffles.
- These Banana and Pecan Cupcake Truffles are quite soft due to banana, so they'll be a bit messy to make. You can freeze the mixture for longer or use gloves when rolling.
Peanut Butter Cupcake Truffles
- Add peanut butter and dry peanut butter powder to cupcake crumbs. Use cocoa powder if you don't have dry peanut butter.
- Add frosting.
- Mix well.
- Roll into walnut size balls. Roll each truffle in crushed peanuts. Makes about 9-10 truffles.
Bailey's Cream Cupcake Truffles
- Add Bailey's Cream Liquor to cupcake crumbs and mix well.
- Add frosting and mix.
- Roll the mixture into walnut size truffles. Roll each in cocoa powder. Makes about 9-10 truffles.
- Keep all truffles in the fridge covered. Will keep for about 3-4 days.

Those truffles look amazing Julia, and I love the idea of using cake! Whenever we had to level our cakes we would just eat the stuff we cut off, but I think we’ll have to try using them to make truffles next time 🙂
