One of the first things that many people cook in their Instant Pot are egg bites. They became popularized by Starbucks that sells sous vide egg bites.
Aside from my delicious and unusual Instant Pot Fruity Egg Bites which taste like a mix between souffle and pancakes, I haven’t actually tried savoury egg bites until recently.
My first foray into egg bites cooking was fine. They turned out ok. Well, they were edible. Not the best way to describe something and definitely not for sharing here. Yet, I didn’t give up.

My second attempt at egg bites turned into these Instant Pot Greek Salad Egg Bites and they are spectacular! They are so good that my husband actually sent me a message from work saying how good they are and he very rarely does that.
Instant Pot Feta and Olives Egg Bites have all the classic flavours of Greek Salad. They are delicious, filling, and healthy. Eat them for breakfast or as part of a meal prep snack. Pair the Greek Salad Egg Bites with a few extra cucumbers and tomatoes, add a pita, a bit of tzatziki or hummus and you have a perfect lunch!
Ingredients to make Instant Pot Greek Salad Egg Bites
- Eggs
- Ricotta
- Feta
- Olives
- Tomato
- Fresh oregano
- Seasonings (I use dried oregano, pepper, and paprika)
Most egg bites recipes use cottage cheese. I love cottage cheese but using it means that you have to put the eggs and cottage cheese through a food processor or a blender to make sure that the mixture is smooth.
Ricotta adds the much needed creaminess and bulk to the egg bites but it is already smooth so you don’t have to use another appliance, just a bowl and a whisk.
How to make Instant Pot Feta and Olives Egg Bites
- Chop all the feta, olives, and tomato.
- Now whisk the eggs, ricotta, and seasonings until smooth.
- Add the feta, olives, and tomato to the egg mixture and mix.
- Divide everything between the Egg Bites Moulds.
- Cook in Instant Pot for 10 minutes then do a natural release of another 10 minutes. Cool and enjoy!
Note: I actually do not have the egg bites moulds brand that I linked to above. I have this particular brand but it is only available on Canadian amazon. This brand looks similar and has great reviews.
You would also need to use a trivet to put the egg bites mould on. Most Instant Pots come with a trivet but if you don’t have one, you can easily buy it.

How long does it actually take to make Greek Salad Egg Bites in Instant Pot?
Chopping, measuring, and mixing of the ingredients takes a very generous 15 minutes. Most likely you could do it in 10 minutes actually. It takes between 5 to 7 minutes for the Instant Pot to come to pressure (depending on the model), then 10 minutes cooking and 10 minutes of natural release, followed by another 1 minute of quick release.
So, start to finish it takes under 42 minutes to make these Greek Salad Egg Bites start to finish.
Can you cook Greek Salad Egg Bites in the oven?
I love these Greek Salad Egg Bites so much that I wanted to make sure that those of my readers who do not have an electric pressure cooker could make them in their oven.
Follow exactly the same directions for making these Egg Bites but instead of using Instant Pot, put the egg bites mould in the oven at 350F. My oven took about 35 minutes to cook them fully without any soft centres.
Silicone egg bites moulds take different time to cook than other materials. I am almost positive that regular muffin tins would work faster and the egg bites would be cooked in about 20 minutes or so.
Now, the flavours of both oven and instant pot egg bites were the same but the texture was slightly different. Oven egg bites had a slight chewy crust/film on top and weren’t as velvety right out of the oven. They got softer as they sat in the fridge for a while.
How to meal prep Greek Salad Egg Bites
I keep saying that I am not really into meal prep but every time I actually make these Greek Salad Egg Bites Snack Boxes, I realize that I love doing this meal prep.
I use these glass containers for my meal preps exclusively, both round and square/rectangular versions.
For the lunch or snack meal prep, I tried mimic a regular Greek Salad:
- Small cherry tomatoes
- Cucumber sticks
- Small container of hummus or tzatziki
- Small pita
- Greek Salad Egg Bites
It works great for breakfast also but if you aren’t into all the savoury flavours then you could do a different breakfast meal prep.
For breakfast meal prep:
- Greek Salad Egg Bites
- Small pita
- Small portion of cheese
- A few grapes, strawberries, or other berries
These Feta and Olives Egg Bites will keep in the fridge in an airtight container for up to 1 week.

Ingredients and variations for Instant Pot Greek Salad Egg Bites
- FetaYou want feta that you could dice into small cubes, not the creamy kind.
- Don’t get crumbled feta as the crumbs are usually pretty small and here you want pieces of feta.
- Don’t use more than 3/4 cup of diced feta as otherwise the mixture will not fit into the egg bites moulds.
- You could use less feta if you’d like.
- OlivesUse really good quality Greek olives, not the canned ones.
- Feel free to omit or use less if you aren’t a big fan of olives.
- TomatoMake sure that all the seeds and juices are taken out of the tomato, otherwise the egg bites will be a bit watery.
- You could use a whole tomato instead of half if you’d like.
- Red onionRed onion isn’t part of the ingredients because I wanted to make these egg bites very work and school friendly.
- However, you could definitely add 1-2 tablespoons of diced red onion.
- Fresh oreganoFresh oregano is not always easy to buy so if you can’t find it, feel free to omit it but it adds great flavour to these Feta and Olives Egg Bites.
- RicottaI love using ricotta because it’s smooth and it mixes really well with the eggs.
- Feel free to use cottage cheese instead of ricotta but you’ll need to use a food processor to blend it with the eggs.
- SeasoningsI find that feta and olives provide enough salt to these egg bites so I don’t add any extra but feel free to add salt to taste if you’d like.
- Dried oregano is crucial to adding that unique Greek Salad flavour to these egg bites, however, if it is not your favourite, feel free to omit. Just remember that the egg bites will taste differently.
- Pepper and paprika are also optional. Feel free to omit, reduce, or increase.
- Also, if you’d like, add other seasonings that you like.

Instant Pot Greek Salad Egg BItes
Ingredients
- 3/4 cup feta (about 100 g)
- 10 Greek olives
- 1/2 medium tomato
- 4 large eggs
- 1/2 cup ricotta
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried oregano (increase to 1/2 teaspoon if not using fresh oregano)
- 1/2 teaspoon fresh oregano (leaves from 2 small stems)
- cooking spray for the moulds
Instructions
- Dice the feta into 1/4-inch pieces.
- Pit and finely chop the Greek olives.TIP: to easily pit the olives, squish them with a side of a blade, it'll help the pit pop out.
- Scrape the seeds out of the tomato half and discard. Make sure to remove all the juices. Finely dice the tomato.
- In a medium bowl, whisk together the eggs, ricotta, seasonings, and fresh oregano until the mixture is smooth.
- Add the diced feta, chopped olives, and diced tomato. Mix.
- Spray the egg bites moulds really well with cooking spray.
- Divide the egg mixture evenly between each of the 7 egg bites moulds.
Instant Pot Cooking Instructions
- Place the trivet that came with your Instant Pot inside.
- Pour 1 cup of water into your Instant Pot.
- Place the filled egg bites mould onto the trivet inside Instant Pot. Cover the moulds with foil.
- Close and lock the lid.
- Turn the vent on the lid to the sealing position.
- Press Manual or Pressure Cooker button (depending on your model) and using the arrow buttons set the cook time to 10 minutes. Depending on your Instant Pot model, it'll take around 5-7 minutes to come to pressure.
- Once the Instant Pot beeps that the 10 minutes of cooking are done, do a natural pressure release for 10 minutes. This means that you do nothing for 10 minutes and just leave Instant Pot to slowly release pressure on its own.
- After 10 minutes of natural release, do a quick release. This will take about 1-2 minutes.
- Carefully remove the egg bites mould out of Instant Pot and let cool. This will help the Greek Salad Egg Bites keep shape. Once cooled, run a knife around the edge of each egg bite and Invert over a plate. Enjoy!
Oven Cooking instructions
- Preheat the oven to 350F.
- Bake for about 30-35 minutes or until the Feta and Olives Egg Bites are no longer jiggly in the centre.
