2teaspoonsrice flour(1 more tablespoon for dipping apple slices, optional)
coconut oil for frying
Instructions
Heat pan on medium heat and brush with coconut oil.
Core an apple and slice into 1/4 inch rounds. You can also slice the apple first and then use a knife or a small round piping tip to remove the core.
In a medium bowl mash the banana with a fork really well.
Add eggs to the mashed banana and mix until well incorporated.
Add baking powder, cinnamon, 2 teaspoons of rice flour and mix.
If using, dip each apple slice into extra rice flour to lightly coat. Then dip into banana-egg batter.
Fry banana dipped apple slices for about 4-5 minutes on each side or until completely cooked adding more coconut oil if needed.
Notes
Most likely there will be extra batter left depending on the size of the apple. You can either slice another apple or just make pancakes with banana-egg batter.
