In a large bowl mix the peanut butter, applesauce, brown sugar, and oil (or an equivalent amount of plant based milk) with a spatula until well incorporated.
Add the flour and baking powder and mix.
Add add ons if using and mix.
Transfer scoops of batter into muffin tins lined with muffin liners.
Bake for about 30 minutes or until toothpick inserted in the centre comes out clean. See note about baking time!!!
I use Kraft smooth peanut butter and I know it has some sugars and oils, so if you use organic one-ingredient peanut butter you may need to add a bit more sugar and oil/milk.My oven always takes a lot longer to bake so start checking the muffins for doneness after about 18 minutes. My oven takes 30 minutes to bake these muffins but in most cases other ovens will take less time.
