This super Easy 3-Ingredient Cake Roll with Strawberry Jam is perfect to celebrate the summer! It takes only a few minutes to prepare and can be done and ready to serve in under an hour. It uses only simple ingredients and has no oil or butter. Perfect Red and White Cake Roll!

Line a quarter sheet pan (9x13-inches) with parchment paper.
In a big bowl, add the eggs and the white sugar and whip with a mixer for about 5 minutes or until the eggs are tripled in volume and are a light pale colour.
Add the flour and carefully fold it into the eggs trying not to deflate the eggs too much. Mix just until the flour disappears.
Spread the batter onto the prepared sheet pan.
Bake for 20-22 minutes or until the cake is risen and springy to the touch.
Once baked, cover with a clean kitchen towel and immediately roll with the towel still on the cake. The towel will roll inside the cake. Roll from the short side.
Let the cake roll cool for about 10 minutes.
Unroll the cake, remove the towel. Spread the Strawberry Chia Jam over the cake and roll it again.
Dust with some icing sugar and decorate with fresh diced strawberries.

This Cake Roll is better once it rested for a few hours and the jam absorbed into the cake a bit.
