Cold Beet Soup
Cold Beet Soup is a perfect way to eat healthy and delicious during summer. A bowl filled with crunchy cucumbers, hard-boiled eggs, sweet beets, and cold creamy kefir will keep you full and satisfied for hours!

cooked beets

(or more for a thinner soup)
Lots of salt
Instructions
Grate the cooked beets.
Finely chop the rest of the ingredients.
Add all the chopped and grated ingredients to a bowl.
Pour kefir over the ingredients and mix.
Add enough salt to taste.
Eat cold.
Notes
You can pre-chop all the ingredients a day or two in advance and keep them in separate container in the fridge.
