Place the filled egg bites mould onto the trivet inside Instant Pot. Cover the moulds with foil. NOTE: If you are making the whole batch in Instant Pot at the same time then you'll need to stack two moulds together. Place a few mason jar lid rings on the bottom mould, then cover with foil. Place the second mould on top and also cover with foil. The mason jar lid rings will help the top mould not to squish the bottom mould.
Close and lock the lid.
Turn the vent on the lid to the sealing position.
Press Manual or Pressure Cooker button (depending on your model) and using the arrow buttons set the cook time to 10 minutes. Use default High Pressure. Depending on your Instant Pot model, it'll take around 5-7 minutes to come to pressure with one mould and will take between 8-10 minutes to come to pressure with two moulds.
Once the Instant Pot beeps that the 10 minutes of cooking are done, do a Quick Release. It will take approximately 2 minutes.
Carefully remove the egg bites mould out of Instant Pot and let cool for a few minutes so that they are safe to handle. Then unmould.
If you do not have buttermilk, in place of 1 cup buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar and let stand for 5 minutes. Resulting batter will be a bit thinner.
