Combine all the ingredients for Gingerbread Steel-Cut Oats in your Instant Pot.
Close and lock the lid.
Turn the vent on the lid to the sealing position.
Press Manual or Pressure Cooker button (depending on your model) and using the arrow buttons set the cook time to 4 minutes. Use default High Pressure. Depending on your Instant Pot model and how cold the ingredients are, it'll take around 5-7 minutes to come to pressure.
Once the Instant Pot beeps that the 4 minutes of cooking are done, do a natural pressure release for about 10-15 minutes. Then finish with a Quick Release.You can let Instant Pot fully release the pressure manually. It should take about 15 minutes anyway.
Open the lid and mix everything really well.
Transfer to a bowl and top with whatever toppings you desire, such as extra molasses drizzle and candied ginger.
